QUESTION

Is there a way to host minecraft servers that doesn’t collect the IP of my fellow money wasters?

owl:

That's almost impossible. You use your IP to connect to anything on the Internet, such as websites or Minecraft servers

familiar:

minecraft server software logs ips by default, so no, unless you modify the server source code

depends on what you are doing. having the IP is probably something necessary, or close to it. For example, I host a minecraft server from a laptop and the issue with that is that I need to give out my public IP

You're collecting IPs? Are they visible to anyone who can bring the server online?

Okay, that’s good. I don’t want any random member of the SMP to pull out my IP from somewhere.
